I just collected data from a MMS sensor with the settings in the picture for 1 minute and it took ~4 minutes to download in close proximity to my iPhone

Yes this is normal.
While you may have recorded data at say 200Hz and gotten 10 million data points in 1 second, the Bluetooth link can only download data at 100Hz. So to download 10 million data points, it will take 2 seconds.
The Bluetooth is slower than our sensors! That's why you can't stream data to your phone at sensor speeds higher than 100Hz (and you must log instead).
