Data Processing from High Frequency Stream

I am using the 2 MetaMotionR sensors for a research project that characterizes stability and variability of natural human walking. Using the accelerometer and gyroscope at 100 Hz each for each sensor.

When using the streaming mode of 2 sensors the timestamps of data collection are the same for each set of 3 data entries. In order to insure the accuracy of the data collected in the streaming mode I was wondering what is actually happening with the packets of 3 data entries when they are recorded? Specifically, can the time stamps for the samples be reliably be interpolated in post collection processing?

I understand that there are capabilities for high frequency streaming that create a packed output mode that combines 3 data samples into 1 ble packet.
